Shrimp and Rice Salad


1 cup long grain rice
1/4 cup white wine vinegar
1/4 cup oil
2 tsp. dried dill weed
1/2 tsp. salt
1/4 tsp. pepper
1 Tbsp. mustard
1/4 cup chopped green onions
1/2 lb. cooked shrimp, shelled and defrozen if frozen
1/2 lb. sugar snap peas, blanched

Cook rice as directed on package. Meanwhile, add the vinegar, the oil, the dill weed, the salt, the pepper and mustard and mix together. Pour 2 Tbsp. of this dressing over the hot rice and toss gently.

Cover rice and refrigerate 1 hour or until cold. In medium bowl, combine rice, green onions, shrimp, pea pods and remaining dressing; toss gently to combine. Place onto serving plates and squeeze some fresh lemon juice over each salad. Serve immediately.

Pitches available at 'Open Air Art Market'

BREAK Charity is holding a 'Bayswater Road' Open Air Art Market at Gresham's School, Holt on 1st July 2007. Pitches are available!!! This event is part of the Antique and Collectors Fair and last year over 4,000 people attended. There are pitches available for hire to artists producing and selling their own work. The money raised from hiring out pitches goes directly to BREAK and there are no commission fees for artists. The money raised for BREAK will continue their supported holidays and respite care for people with a range of disabilities, giving their families and carers a well earned rest from the strains of full time caring. Local Artist

I recently came across an artist who was showing and selling pictures in between the HSBC and Barclays banks in Sheringham. Now I know that art means something different to us all but for me this guy did it. His name is Riccardo and he's out there quite often. Take a look if you have'nt already. His stuff is so imaginative and textured, I've already bought ten of his pictures. He lives in East Beckham and is self taught. Seeing him in the street, bicycle with paintings, reminded me so much of my travels in Holland and Germany last year. People like this bring so much culture to our lives. Again it reminded me of my time when one Summer I worked the Cote D'Azur as a solo guitarist, coming across so many inspiring and talented artists who became my friends. 1st Melton Constable Guides

1st Melton Constable Guides meet on Tuesday evenings at the Copeman Centre in Briston and currently needs your help. The 21 gorgeous Guides, aged between 10 and 15 years old, who are full of fun and are a pleasure to work with, need some more adult helpers. The Unit is currently being looked after by two experienced Guiders who live a distance away and would welcome some additional help and support.  This help could be with the running of the Unit, or just 'behind the scenes', keeping accounts, completing paperwork or sharing a particular skill or interest that you have. Without some extra help, the Unit's long-term future is in doubt ...please try to support it and ensure that this important community group continues to flourish in your village.
