COOKS CORNER
MARSHMALLOW CAKE.
175g (6oz) self-raising flour.
50g (2oz) cocoa.
150g (5oz) caster sugar.
150g (5oz) soft-tub margarine.
3 large eggs.
4 tablespoons low fat natural yoghurt.
1 teaspoon drinking chocolate
For the icing.
1egg white.
175g (6oz) caster sugar.
1/8th teaspoon cream of tartar.
1/8th teaspoon salt.
Preheat oven to 180c-350 f -gas 4.
Lightly grease a 20cm (8in) loose-bottomed round cake tin.
Sift the flour and cocoa together into a mixing bowl. Add the sugar, margarine, eggs
and yoghurt, beat until smooth. Spoon into the tin, level, then make a slight dip in the
centre. Bake for 40 minutes, or until springy to the touch. Cool for 5 minutes, then
turn out the cake onto a wire rack. Allow to cool completely. For the icing, put the
egg white, sugar, cream of tartar,salt and 2 tablespoons water in a heatproof bowl set
over a half-full pan of gently simmering water. (make sure the bowl does not touch the
water.) Whisk for 7 minutes, or until soft peaks form. Slice the cake in half
horizontally. Put I layer on a serving plate and spread with a thin layer of icing. Put
the other cake layer on top. Spread the remaining icing over the top and side. Flick the
top with the tip of a knife to form peaks. Chill until required. Dust with drinking
chocolate to serve.

North Norfolk Photographic Society -NoNoPS - on 21st November were treated
to a show of photographs and music presented by David Boulton.
David left his job as a Norfolk postman a few years ago to become a professional
photographer and gave a lovely display of his pictures of flowers, animals and scenery
from throughout Britain. Many images were drawn from his local surroundings around Norfolk
and Suffolk, but a lot of his favourite places in the Yorkshire Dales, the Derbyshire Peak
District and the Lake District were there too.
The display was accompanied by soothing music and the result was a peaceful evening -
looking at someone elses photographs for a change!
The Societys next meeting is on December 5th at the Community Centre, Holt at
7.30 when the clubs Portfolio Competition will take place. Members entering submit 3
photographs on a common theme to be judged both as individual images and as a portfolio
group.
After a short Christmas break the following meeting (same time and place) will be on
January 9th when Gordon Fellowes ARPS will give a talk entitled Through My
Eyes. Curious visitors are most welcome - as are new members. Further information
