Chocolate Fridge Cake
225g (8oz) digestive biscuits.
100g (4oz) butter.
2tbsp golden syrup.
175g (6oz) plain chocolate.
175g (6oz) milk chocolate.
50g (2oz) whole blanched almonds.
100g (4oz) no need to soak dried apricots (chopped).
50g (2oz) white chocolate to decorate.
Method
Lightly grease a 450g/1lb loaf tin and line the base and sides with greaseproof paper,
place biscuits in a plastic bag and roughly crush with a rolling pin, take care not to
over-crush or you will end up with crumbs. Put butter, golden syrup, plain and milk
chocolate in a small saucepan and heat gently until just melted. Mix together until
smooth, then remove from the heat. Tip the crushed biscuits, whole almonds and chopped
apricots into the chocolate mixture and mix together until all the ingredients are evenly
coated. Spoon the mixture into the prepared loaf tin and press down well with the back of
a wooden spoon, leave to set for 3-4 hours or overnight in the fridge. When set, carefully
turn cake out of tin on to a serving plate, peel off the paper. To decorate, melt the
white chocolate in a heat-proof bowl set over a pan of slimmering water. Spoon into a
greaseproof paper piping bag, snip the end, then drizzle over the top of cake, leave to
set, then slice. |
