Luscious Lemon Cake
Ingredients for the cake:
100g/4oz Soft Margarine
2 large eggs
4 tbsp Milk
175g/7oz Caster Sugar
175g/7oz Self-Raising Flour - sifted
Finely grated rind of one lemon
Ingredients for the syrup:
3 rounded tbsp icing sugar
Sifted juice of one lemon
Method:
Grease and line a 900g loaf tin. Preheat the oven to 180C/350F/Gas Mark 4. Creme together
Margarine and sugar. Add the eggs, flour, lemon rind and milk.
Mix well to a soft dropping consistency. Put into tin, smooth the top and bake for 40-45
minutes until firm.
Mix sifted icing sugar and lemon juice and pour over cake as soon as it comes out of the
oven. Leave in tin until completely cold before turning out. |
