| Liver and bacon with dead fancy mash |
Ingredients:
Lamb's liver
5 tbsp Olive Oil
2 tbsp chopped sage
2 potatoes, chopped
2 tbsp double cream
3 slices back bacon smoked, in strips
1 onion, chopped
340g oyster mushrooms, chopped, stalks removed
1 garlic clove, chopped
1 tbsp balsamic vinegar
1 tbsp sherry
6 tomatoes, skinned and seeded
Salt and pepper
Method: Trim and slice thinly the Lamb's liver, keep trimmings, marinade liver on a plate
in 3 tbsp olive oil, 1 tbsp sage, season and keep to one side. Cut potatoes into chunks,
cook and mash with olive oil, double cream, chives and seasonings. Heat 1 tbsp olive oil,
and fry liver with half the onion, mushroom stalks, garlic, 1 tbsp sage for 2 minutes. Add
balsamic vinegar and sherry, cook for 5 minutes, sieve and return to pan. Fry bacon strips
until crisp, remove, fry mushrooms and remaining onion and the chopped tomatoes. Return
half bacon to the pan with the chives, season and heat griddle, fry liver for 2 minutes.
Put bacon and mushroom on to the plate, add the liver on top, spooning on the potatoes.
Pour sauces around and garnish with chopped bacon. |

At the June meeting, members thoroughly enjoyed the tales from Betty Fielden about her
''Life on the Wicked Stage,' which began 52 years ago in unglamorous times , when
auditions resembled Miss World contests, good digs were hard to find and superstitions
abounded. Nevertheless, she was successful, taking part in shows staged by Emile Littler
and Jack Hylton, meeting Julie Andrews, a true friend, and Vic Oliver, culminating in
appearances on television in black & white days. Two members, Pam Akiens and Elsie
Swan were congratulated on their Golden Wedding Anniversaries as were the members who
designed the gardens for the Group competition, when we won the cup. Our resolution on
Care of Older People was adopted at the AGM at the Albert Hall by a 99o/o majority of
Institutes voting nationally and a Sub-committee was formed to press home our objectives
with the relevant authorities. Flower of the month competition winners were Edna Abbs, Pam
Akiens and Sylvia Tatum. Our next meeting will be held at St Andrew's Church Hall, Cromer
Road, on 10th July at 7.30pm when the speaker, Miss Farida Sheikh, will talk about Colney
Wood. You are most welcome to join us.

LOCAL MP SAYS
CARERS DESERVE BETTER SUPPORT |
Norman Lamb, Liberal Democrat MP for North
Norfolk, today called for carers to be given better support at the workplace and by the
County Council. Speaking in advance of Carers Week (June 9 -15), the MP said the 12,910
carers in the North Norfolk constituency deserved better support.
"Without carers looking after their loved ones, there would be massive extra demands
on the NHS and social services. Over half of all carers continue to work and contribute to
the local economy, often juggling their different roles with considerable difficulty.
"The main problem for carers is the lack of flexibility at the workplace. In many
cases, carers need more flexible working arrangements than are currently on offer.
"Norfolk County Council can help as well. Many carers have told me about the problems
of day-care services available only for limited periods of the day, the lack of funding
for replacement and short-term breaks, that there is an absence of evening and weekend
services in a supposed 24-hour society, and that childcare services frequently do not
cater for disabled children.
"Carers contribute much through their dedicated and unpaid help, and deserve our
unstinting support." |

California, twice a year for two months at a time, it's really nice here and for 12 years
I worked in the water aerobic and fitness business. I moved back to live in dear
Sheringham five years ago, it's the most wonderful place to be. I do come from Mildenhall
