| Pineapple Crab - for 4 persons |
Ingredients:
4 slices of fresh or rings of canned pineapple
113g small mushrooms thinly sliced
1 tablespoon Light Rum
2 tablespoons Lemon Juice
170-227g Fresh Crab Mixed (white and brown meet)
57-85g Cream Cheese
2 Spring Onions (white part) finely chopped
1 teaspoon French Mustard
Salt and Cayenne pepper to taste
1 Root Ginger finely chopped or ground Ginger
Chives and Parsley chopped
Method:
Place the trimmed and cored pineapple on each plate, sprinkle with Rum and leave. Toss the
mushrooms in the lemon juice. In another bowl mix together the Crab meat, Cream Cheese,
Spring Onions and the Mustard plus the salt and Cayenne Pepper. Spoon the Crab Mixture
onto the Pineapple slices. Spoon Lemon Mushrooms on to Plate and decorate with small
pieces of Root Ginger if used. Serve with Salad.

Shantymen were there of course and were absolutely marvellous. |
