Sheringham Community Paper Cook's Corner

Your fortnightly recipe to
tantalise your taste buds
Pork Crescents Casserole
7.5 oz packet puff pastry
2.5 lb boneless pork fillet, cubed
2 tbsp oil
12oz small onions
1pt chicken stock
Salt and black pepper
1 egg, beaten
4oz streaky bacon cut in to small pieces
2oz butter
4 tbsp plain flour
Grated rind half lemon use zest
2 tbsp sage
3 tbsp sherry

Method:
Roll out pastry to quarter inch thick, brush with egg. Cut out crescents using a 2.5" diameter cutter. Place on greased baking tray and cook in oven for 20 minutes at 220oC. Heat oil and butter in casserole and brown pork and streaky bacon. Reserve meat and add onions to brown (a little brown sugar assists this browning) again reserve onions, mix flour and fry gently for 2 minutes. Add stock with lemon zest, herbs and seasoning, bring to the boil constantly stirring. Replace meat and onions. Cover casserole and cook for 2 hours at 150oC. Stir in the sherry and adjust the seasoning and serve with the puff pastry crescents.
