| Liver and bacon with dead fancy mash |
Lamb's liver
5 tbsp Olive Oil
2 tbsp chopped sage
2 potatoes, chopped
2 tbsp double cream
3 slices back bacon smoked, in strips
1 onion, chopped
340g oyster mushrooms, chopped, stalks removed
1 garlic clove, chopped
1 tbsp balsamic vinegar
1 tbsp sherry
6 tomatoes, skinned and seeded
Salt and pepper
Method: Trim and slice thinly the Lamb's liver, keep trimmings, marinade liver on a plate
in 3 tbsp olive oil, 1 tbsp sage, season and keep to one side. Cut potatoes into chunks,
cook and mash with olive oil, double cream, chives and seasonings. Heat 1 tbsp olive oil,
and fry liver with half the onion, mushroom stalks, garlic, 1 tbsp sage for 2 minutes. Add
balsamic vinegar and sherry, cook for 5 minutes, sieve and return to pan. Fry bacon strips
until crisp, remove, fry mushrooms and remaining onion and the chopped tomatoes. Return
half the bacon to the pan with the chives, season and heat griddle, fry liver for 2
minutes. Put bacon and mushroom on to the plate, add the liver on top, spooning on the
potatoes. Pour sauces around and garnish with chopped bacon. |

I was horrified to read in the local press recently that
the new controlling LibDem group on North Norfolk District Council is already planning a
rise in Council tax. I do not recall the LibDems pledging to raise Council tax in their
May manifesto. On the contrary, I distinctly recall the promise of £100 cash back on
Council tax if LibDems came to power and a pledge to abolish Council tax altogether. Those
who voted for LibDem councillors in good faith at the May elections must now surely feel
utterly betrayed.
In the same article, plans were outlined to make the Executive Committee on the District
Council a purely LibDem cabinet, thereby eliminating any effective opposition from other
parties and Independents to a further Council tax hike.
If I remember rightly, the Executive Committee with a political balance was chosen
democratically by the people of North Norfolk after a questionnaire was sent out a few

As part of the on-going celebrations in centenary year at Kelling Hospital, a Variety Show
is being staged at the Auden Theatre, Holt on Saturday September 27th 2003 at 7.30pm. The
show will be starring Ian Adams, a former song and dance man with the Cromer Pier Seaside
