Chocolate Cherries
50g (2oz) ground almonds
50g (2oz) icing sugar
1 egg yolk
1 teaspoon lemon juice
Few drops almond essence
16 glace cherries
125g (4oz) plain chocolate (melted)
25g (1oz) milk chocolate ( melted)
Place the almonds, icing sugar, egg yolk, lemon juice, and almond essence in a bowl, mix
together to form a paste. Divide into 16 pieces and mould one piece around each cherry to
form a ball. Using a skewer, dip each cherry ball into the plain chocolate, place on a
baking sheet lined with greaseproof paper and leave until set. Pipe a design on top with
the cooled milk chocolate. Serve in paper sweet cases.
Chocolate Chews
2 egg whites
75g (3oz) caster sugar
150g (5oz) desiccated coconut
2 tablespoons cocoa powder, sifted
Whisk the egg whites until stiff, then whisk in the sugar. Carefully fold in the coconut
and cocoa. Place small mounds of the mixture on a baking sheet lined with non-stick paper.
Bake in a preheated moderate oven, 180C (350F), Gas Mark 4 for 15 to 20 minutes until
lightly browned; the mixture will still feel soft but will crisp as it cools. Carefully
remove from the paper with a palette knife when cool. Makes 12.
