COURGETTE CASSEROLE
700g (1.5 lb) courgettes topped tailed and diced fairly small
1 red pepper deseeded and finely diced
1 green pepper deseeded and finely diced
1 large onion finely diced
60g (2.5 oz) breadcrumbs
110g (4oz) cheddar cheese, grated
110ml (4 floz) olive oil
1 tbsp finely chopped basil or parsley
2 large eggs, well beaten
salt & pepper
Method
Pre-heat oven to 350F/180C/gas mark 4. In a large bowl combine the courgettes, peppers,
onions, breadcrumbs, cheese, oil, basil or parsley, eggs and seasonings to taste. Transfer
the mixture to a baking dish (13'' x 9'' is ideal) and bake in the oven for 50-60 mins, or
until the top is browning lightly.
Serve piping hot as a light meal or vegetable. The casserole reheats very well. Just add a
little extra oil and grated cheese sprinkled on the top. |

Hello I'm the lady who gave you the information from my
Mum about the Silver Fox Farm.
Just wondered if there is anyone in Sheringham who is older that my Mum or her cousin. Mum
will be 92 in January and her cousin (who lives on the back common) will be 92 in
February. Can anyone beat that, Mum lives in Chelmsford now but Sheringham is still her
home and I am sure she would love to hear if anyone she knew as a girl is still alive. We
try to get her down there once a year if she's up to it, although she gets about still and
does her own housework and a bit of gardening. Please get in touch if you know of anyone.

Contemporary folk group Red Oktober begins a busy 2004
programme with a concert sponsored by The Norfolk and Norwich Association for the Blind.
Tickets are £6:50 and can be pre-booked by credit card on 07050-615097. Also appearing
are Harlequin, a Sheringham based group who are well known and regarded in the area. Red
Oktober will be appearing in Sheringham later in the year with Lindisfarne on their final
acoustic tour. Their eagerly awaited first album, Surface Tension, looks set to be a big
success. The folk trio's gentle blend of close harmony is easy on the ear and is well
suited for Folk Music. Their choice of material is varied and entertaining and for me
personally, "Farewell to Tarwathie" is the pick of an excellent choice of songs.

| What a pleasure to read "At-Sheringham" this
afternoon! I lived in Sheringham from 1959 to 1961, when I was six, seven, and eight
years old. Although a US citizen (my father was a military officer, stationed at
Sculthorpe), even now I claim Sheringham as my "hometown."
I attended the council school in first form, and later the convent school in Cromer.
Oh, how I miss your lovely seaside town! Every decade or so I'm able to come back and
visit in person, but more often, I enjoy the various web sites that keep me in touch.
Yours is informative, attractive, and full of personal notes, opinions, and insights
that help me understand what's happening in Sheringham.
Thank you very much for your excellent web site, your service to the community, and for
