Potato & Sausage Bake
900g (2lb) red potatoes (e.g. Desiree), cut into 3cm (1.1/2in) pieces.
450g (1lb) low fat pork, beef, turkey or vegetarian sausages
½ onion
1 red pepper.
150ml (1/4 pint) hot vegetable stock
1 teaspoon dried oregano
Pinch salt, black pepper.
Preheat oven to 200c/400 f/gas 6. Put the potatoes in a pan and cover with boiling water.
Boil for 8-10 minutes, or until slightly softened. While the potatoes are cooking,
cut the sausages into 2.5cm (1in) pieces. Peel and finely chop the onion. Seed and chop
the red pepper. Put the sausages and onion into a non-stick frying pan. Dry- fry
over a medium heat for 4 minutes or until browned, stirring occasionally. Stir in the red
pepper. Mix the stock with the oregano, salt and black pepper. Drain the potatoes
and put into a shallow baking dish. Stir in the sausage mixture, then add the stock
mixture. Bake for 40 minutes, stirring once halfway through, until the potatoes are crisp
and cooked in the centre. Serves 4. Great with salad and slices of garlic bread (if
liked).
CHOCOLATE MARSHMALLOW PIE
1-pkt dark chocolate digestive biscuits (crushed)
75g (3oz) butter (melted)
175g (6oz) plain chocolate
1 pkt marshmallows (plain)
150ml 5 fl oz double cream
Heat oven to 180c. Mix together biscuit crumbs and melted butter and press around
base and sides of 8 in flan dish. Bake 10 minutes, Take out and cool. Put the choc,
broken into pieces, into a heatproof bowl and add marshmallows and the cream. Put bowl
over pan of gently simmering water until chocolate and marshmallows melt. Stir the melted
mixture and pour into the cooled chocolate piecrust. Leave to set. |

AWARDS HOLKHAM
CYCLE RIDERS AND VOLUNTEERS |
| Riders, guests and volunteers attended the
Award Presentation Evening on Friday 16th April 2004 at the Red Hart, Bodham. Graham
Nobbs and Richard Sparrow accepted the Chelsea Shield award for Best Team on
behalf of the Robinsons Riders. Best Individual was won by Sandra McKay. Janice
Hulett, Fundraising Manager, accepted the Big C Appeal Cup on her behalf. Families
play a very important part in the success of each Holkham Ride and this year the Big C
awarded a special Junior Cup to Will Dorsett aged 16 years. Special Achievement Medals
were awarded to Jake Graham and Jessica Shoesmith, both aged six years. Over £9000
was raised and grateful thanks go to all the riders and their sponsors for such valuable
support. |

Appeal 19th Annual Holkham Cycle Ride will take place this year on Sunday 3rd October to
raise much needed funds for the new Big C Family Cancer Information and Support Centre. |
| Entry forms will be available from beginning
of June onwards. The Ride will be opened by Carol Bundock of BBC Look East and it will be
a real family fun day with a chance to ride around the magnificent grounds of Holkham
Hall. The six mile circuit is suitable for all abilities and everyone is welcome. |
