Eggs Ole
8 eggs, 2 tbsp milk, 25g (1oz) butter, 1 medium onion, chopped, 1 small green pepper,
seeded and diced, 1 firm tomato, chopped, 100g (4oz) Cheddar cheese, grated, Salt
and pepper to taste.
1/ in a bowl, beat eggs with milk and seasoning. Melt butter in a saucepan, add onion,
green pepper and cook over gentle heat for 2 mins.
2/ Add egg mixture to pan and cook over medium heat for 1-2 mins until beginning to
scramble, stir in tomato and 75g (3oz) grated cheese. Continue cooking until mixture is
scrambled.
3/ Sprinkle with remaining cheese and serve at once.
Oriental Pork with Almonds
450g (1 lb.) boneless pork chops or fillet, 40g (11/2oz) plain flour, 2 tbsp oil, 450g ml
(3/4pt) chicken stock, 3 tbsp soy sauce, 50g (2oz) shredded almonds, 25g (1oz) butter or
margarine, 100g (4oz) mushrooms, sliced, 1 medium onion, sliced lengthways, 3 sticks
celery, sliced diagonally, Sliced spring onions, (green part only to garnish), Hot cooked
rice, to serve.
1/ Trim fat from pork. Cut meat into 2cm (3/4 in) cubes. Roll in flour.
2/ Heat oil in a large saucepan and saute pork cubes over high heat, stirring frequently,
until browned.
3/ Stir in chicken stock and soy sauce and set aside.
4/ In a small frying-pan, brown almonds lightly in half the butter. Remove from pan and
reserve.
5/ Melt remaining butter in pan. Add mushrooms and onion. Saute until onion is tender.
6/ Add mushrooms, onion and celery to pork. Bring to a boil and simmer, covered, for 30
mins, or until pork is tender.
7/ Stir in almonds. Turn into serving dish. Garnish. Serve with rice. |

WI Market 10th Annivesary |

Our market started in July 1994, selling food, preserves, eggs, plants
and crafts from the small booking office at The Little Theatre. That booking office was
enlarged twice to include a bar/coffee lounge and we enjoyed a couple of years of good
trade there, meeting many visitors and old friends each week. It was a good venue in the
centre of town, the move to the St John Ambulance Hall in Wyndham Street gave us more
room, but we lost a lot of trade from casual visitors. However, our regular customers
remained loyal to us and on July 15th were able to join with us in celebrating ten years
of marketing. This year also marks a change in the National Organisation of WI Markets as
our name has changed to Country Markets Ltd. Same people same produce same
standards same reputation, for fresh home-made goods.
We look forward to seeing you all during the next ten years, Thursdays 10 11.30am
also at the Farmers Market in Fakenham on the 4th Saturday of each month.
