Your fortnightly recipe to
tantalise your taste buds

Fruit Kebabs

1 orange
1 eating apple
1 banana
Lemon juice
2oz/50g white grapes
2oz/50g black grapes
1 hard pear

Cut the peel and pith from the orange and cut the flesh into 1/2/1.25cm slices. Cut each slice in half. Don't cut the flesh from the segment skins as you would for a fruit salad, as this makes the fruit too soft to skewer and it tends to fall into the fire during cooking. Rinse the apple and peel it if you like, otherwise just remove the core. Peel the banana and cut it into 1in/ 2.5cm chunks. Toss the apple and banana pieces in the lemon juice to prevent them turning brown. Wash the grapes and if you wish, remove the pips by squeezing each grape gently so that the pips appear in the tiny hole left by removing the stalks. Try to keep the grapes whole. Rinse the pear and cut it into quarters, peeling it only if you think it really necessary. Remove the core.

Thread the fruit on to 4 skewers, alternating the different varieties. Lay the skewers on a hot barbecue for about 10 minutes, turning them frequently so that the apple and pear pieces singe very lightly. It is not essential for the fruit to cook right through as a little 'bite' of raw fruit in the centre makes a good contrast to the soft fruit outside.

Try other fruit, such as fresh dates or fresh pineapple, in this recipe to ring the changes Avoid very soft fruit, such as strawberries, which are difficult to skewer. Serve the kebabs with a dip of lemon juice and brown sugar if wished.
