Your fortnightly recipe to
tantalise your taste buds

East Anglia Scones

1lb/450g self-raising flour
1 level teaspoon salt
4oz/ 100g margarine
2 large eggs
1/4 pint plus 4 tablespoons/185ml milk
1oz/ 25g butter
4oz/ 100g sultanas
1/2 level teaspoon ground cinnamon
3oz/75g soft dark brown sugar

Sift the flour and salt into a bowl and rub in the margarine.  Beat the eggs and most of the milk together, then add to the flour mixture and mix to soft dough.  You may not need to use all the milk.  Lightly knead the dough on a lightly floured board.  Divide it into two halves and roll each half into a 10in/25cm round.  Lift one round on to a greased baking sheet.  Soften the butter and spread it over the round to within 1/2in / 1.25 cm of the edge.  Mix the sultanas, cinnamon and 2oz/50g brown sugar together and sprinkle them over the butter.  Moisten the edge of this round and place the second round on top, pressing the edges lightly to seal them.  Cut the rounds into 10 sections, leaving the sections pressed close against each other.  Brush the top with the remaining milk, sprinkle with the rest of the sugar and bake in a moderately hot oven (375 F/ 190 C, gas mark 5) for 30 to 40 minutes or until golden brown.  They can be stored in an airtight tin, to be eaten within 2 or 3 days.
