Your fortnightly recipe to
tantalise your taste buds

              Rum & Raisin Cake            
1 lb. (450g) Seedless raisins
1/4 Pint (150ml) Dark Jamaican Rum   
12oz (350g) Plain Flour
1 1/2 Level Teaspoons Baking powder
8oz (225g) Demerara Sugar
8oz (225g) Butter
3 Eggs, Beaten
A little extra Demerara sugar

Preparation Time: 20 min, plus soaking time
Cooking time 11/4 - 11/2 hours
Pre-heat oven to 160c (325f) gas 3
Makes one 7 1/2 " (190mm) cake tin



Soak raisins in half the rum overnight until the fruit has swollen.  Grease and line a 71/2 " (190mm) cake tin.  Sieve the flour and baking powder into a mixing bowl and stir in the sugar.  Cut the butter into the mixture and rub it in until the mixture resembles breadcrumbs.  Stir in the raisins and beaten eggs and mix well.   Turn the mixture into the prepared cake tin, and smooth level.  Sprinkle with the extra demerara sugar.  Bake in the centre of the pre-heated oven for 11/4 - 11/2 hours, or until a fine skewer inserted into the centre of the cake comes out clean.   Cool the cake in the tin for 15 min.  Turn out onto a wire rack.  Trickle the remainder of the rum over the top of the cake and let it soak in.  Leave the cake until it is quiet cold before cutting.

NORTH NORFOLK CAMERA CLUB

The last club meeting of the year was the Summer Cup competition on our chosen subject of The River Glaven and its valley. The river rises at various places from Lower Bodham to Baconsthorpe and eventually joins the sea at Blakeney Harbour. Members' slides and prints captured such diverse elements as insects, wildlife, landscape views, farming, fords, lakes, mills etc. and the project opened our eyes to the sometimes unnoticed treasures that this river valley holds.  Top marks were given to prints by Alan Dedman and Peter Lord and joint third place went to Judy Knights and Trudy White.   Alan's print of "The New Cut" was chosen to win the cup this year.   First and third places in the slide section went to John Norton and Roland Riddell took second place.

There will not be a meeting on Jan 18th as the club has been invited to Hunstanton Camera Club at their venue.  On February 1st we have a photo-forum evening where members bring prints and slides for discussion.  Forum meetings generate debate and helpful advice on various aspects of producing pictures from composition, light, colour, printing and computer enhancement to mounting prints.  February 15th sees the Best All Rounder competition and on March 1st there will be an audio/visual show on The Romance of Rajastan - make a note in your diary! Visitors are welcome to all meetings held on Wednesdays fortnightly at Holt Community Centre Lounge Room, 7 for 7.30pm start. For further information ring Liz Kendall on 01263 740493.
